Healthy Vegan Nachos with Cheese Sauce

Ingredients

Tortilla chips

  • 6 medium tortillas

Cheese sauce

  • 2 Yukon gold potatoes
  • 1 carrot
  • 1 cup nutritional yeast
  • 1 cup veggie broth
  • 3 tbsp lemon juice
  • 2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp turmeric
  • 3/4 tsp salt

Protein mixture

  • 200g smoked tofu
  • 1/2 cup black beans
  • 1/4 cup tomato sauce
  • 2 tbsp taco seasoning

Toppings

  • Tomato
  • Green onion
  • Black olives

Preparation

  1. Slice your tortillas into triangles, spread them out onto 2-3 baking sheets and bake for 5-7 minutes at 450°F until slightly golden.

  2. Roughly chop and boil your potatoes and carrot until fork tender, then add them to a high speed blender along with the rest of the cheese sauce ingredients and blend until smooth.

  3. Crumble your tofu into a pan over medium heat along with your black beans, tomato sauce and taco seasoning and cook for a few minutes until heated through.

  4. Add your tortilla chips to one baking tray and add on your protein and toppings of choice, then drizzle on your cheese sauce and bake at 450°F for 15 minutes.

Serving suggestions

  1. Serve with some vegan sour cream, extra cheese sauce or guacamole and enjoy.
