Vegan Cauliflower Nachos Tray Bake
Ingredients
- 1 head cauliflower
- 1 tbsp fajita or taco spice mix
- 1 tbsp olive oil for roasting
- 1/2 can (400g) black beans
- 1/2 avocado
- 200g tomatoes
- 1/2 red onion
- A bunch of coriander
- Salt and pepper to taste
Cheese sauce
- 1 cup peeled and cooked white potatoes
- 1/2 cup chopped cooked carrots
- 2 tbsp raw cashews soaked in water for at least 3 hours
- 3 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 cup unsweetened almond or soy milk
- 2 tbsp lemon juice
- 1/2 tsp yellow mustard
- Salt and pepper to taste
Preparation
Blend all cheese sauce ingredients until creamy and smooth, then let it cool slightly.
Add cauliflower to a large baking tray, sprinkle with fajita spice mix, olive oil, salt, and pepper, and roast in the oven for 25 minutes until soft.
In a bowl, combine chopped tomatoes, red onion, and coriander, season with a pinch of salt, and mix.
Remove cauliflower from the oven, add drained black beans, tomato and onion mixture, chopped avocado, and drizzle generously with cheese sauce.
