Vegan Cauliflower Nachos Tray Bake

Ingredients

  • 1 head cauliflower
  • 1 tbsp fajita or taco spice mix
  • 1 tbsp olive oil for roasting
  • 1/2 can (400g) black beans
  • 1/2 avocado
  • 200g tomatoes
  • 1/2 red onion
  • A bunch of coriander
  • Salt and pepper to taste

Cheese sauce

  • 1 cup peeled and cooked white potatoes
  • 1/2 cup chopped cooked carrots
  • 2 tbsp raw cashews soaked in water for at least 3 hours
  • 3 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 cup unsweetened almond or soy milk
  • 2 tbsp lemon juice
  • 1/2 tsp yellow mustard
  • Salt and pepper to taste

Preparation

  1. Blend all cheese sauce ingredients until creamy and smooth, then let it cool slightly.

  2. Add cauliflower to a large baking tray, sprinkle with fajita spice mix, olive oil, salt, and pepper, and roast in the oven for 25 minutes until soft.

  3. In a bowl, combine chopped tomatoes, red onion, and coriander, season with a pinch of salt, and mix.

  4. Remove cauliflower from the oven, add drained black beans, tomato and onion mixture, chopped avocado, and drizzle generously with cheese sauce.
