Vegan Black Bean and Quinoa Chili
Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 carrot, chopped
- 1 zucchini, chopped
- 1 can (14 oz) black beans, rinsed and drained
- 1 can (14 oz) diced tomatoes
- 1 cup cooked quinoa
- 2 cups vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
Optional toppings

- cilantro
- lime wedges
Preparation
Heat the olive oil in a large pot over medium heat.
Add the onion, garlic, bell pepper, carrot, and zucchini and sauté until softened.
Stir in the chili powder, cumin, and paprika.
Add the black beans, diced tomatoes, cooked quinoa, and vegetable broth.
Season with salt and pepper to taste and bring to a simmer.
Cook for about 20-30 minutes until the flavors meld and the chili thickens.
Serve hot, optionally topped with avocado, cilantro, or lime wedges.
