Hearty Vegan Lentil Chili
Ingredients
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1 cup red lentils
- 1 can diced tomatoes
- 1 zucchini, chopped
- 1 cup pumpkin, chopped
- 1 tbsp @leekumkeeaustralia soy sauce
- 1 tsp dried oregano
- 2 heaped tbsp tahini
- Juice of 1/2 a lemon
- Salt and pepper, to taste
Preparation
Heat some olive oil in a pan, then add onion and garlic and sauté until just soft.
Add your spices and sauté for a minute until fragrant, then add lentils, chopped veggies, oregano, tinned tomato, soy sauce and 1 cup water.
Simmer for about 30 minutes until thick and veggies are soft, adding more water if needed.
To finish, stir through tahini and lemon, and season to taste.
Notes
Soy sauce adds umami flavor to plant-based dishes and is made from fermented soy beans.
This chili is perfect for mid-week meals or meal prep and is high in protein.
