Fully Loaded Breakfast Tacos
Ingredients
- 1 block of firm tofu, rinsed & crumbled
- 1 tbsp olive or avocado oil
- 1 bell pepper, chopped small
- 1/2 medium onion, chopped small
- 2 garlic cloves, minced
- 1 handful of spinach, chopped
- 1/4 cup salsa
- 1 can black beans, rinsed & drained
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp turmeric
- a pinch of salt & pepper
- 10 taco shells
- toppings ideas:
- avocado
- salasa
- dairy-free cheese
- fresh chopped cilantro
Preparation
Start by heating oil over medium heat in a large skillet
Sauté onions & pepper until soft (about 5 mins)
Add garlic, crumbled tofu and spices
Let cook for 10 minutes stirring often until water has been evaporated from tofu
Add beans, salsa, spinach and cook for an additional 3 minutes
Load taco shells with mixture and toppings of choice!
