My Favorite Taco Soup

Ingredients

  • 1 tbsp avocado or olive oil
  • 1 large onion, chopped
  • 3-4 garlic cloves, roughly chopped
  • 1 bell pepper, chopped
  • 2 ribs of celery, chopped
  • 2 medium carrots, chopped
  • 2 cups of diced tomatoes
  • 1 pouch of taco seasoning (I like @simplyorganicfoods )
  • 1/4 cup green chilis
  • 2 (398ml) cans of black beans
  • 2 (398ml) cans of red kidney beans
  • 6 cups vegetable broth
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 1/4 cup salsa
  • A big pinch of salt & pepper

Preparation

  1. Heat oil over medium heat in a large soup pot. Add onions and cook for about 3 minutes until they begin to soften.

  2. Add garlic, bell pepper, celery, and carrot and let cook for 5 minutes.

  3. Stir in taco seasoning, diced tomatoes, green chilies, black and kidney beans, oregano, and cumin until everything is well coated in spice mix.

  4. Pour in vegetable broth, salsa, and season with salt and pepper.

  5. Turn heat to a simmer and let soup cook for 20-30 minutes to combine flavors.

  6. Once soup is done, use an immersion blender to blend soup.

Toppings

  1. Top the soup with favorite taco fillings such as cilantro, cheese, cashew cream, salsa, avocado, jalapeños, and tortilla chips.
