Homemade Southwest Potato Chips and Guacamole

Ingredients

  • 4 russet potatoes sliced thin
  • 2 tbsp olive oil
  • 1/2 tsp salt

Optional southwestern spices

  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp garlic

Guacamole

  • 1 avocado mashed
  • 1/4 cup diced tomatoes
  • 1/4 cup diced onion
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • 1/2 tsp salt
  • 1/4 tsp cumin

Preparation

  1. Preheat oven to 400°F

  2. Toss the sliced potatoes with olive oil and seasonings

  3. Bake on a wire rack for 50 minutes

Guacamole

  1. Mix together and enjoy
