Vegan egyptian food

Ingredients

  • 2 cans plain fava beans
  • 2 tomatoes, diced
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • salt & pepper
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tbsp lemon juice
  • 3 tbsp (or more as needed) olive oil
  • 1 cup chopped parsley

Preparation

  1. In a big pot, sauté the garlic & onions in olive oil

  2. Once they’re golden brown, add the chopped tomato

  3. Add all the spices

  4. Once all the liquid from the tomatoes is cooked out, add the beans

  5. Lower heat to medium low and mash the beans into the tomato mixture using a potato masher

  6. Mix thoroughly and let the flavors marinate for 15 min, stirring occasionally

  7. When ready to serve, garnish with lemon juice, fresh parsley, and pita bread
