Black Bean Tacos Lettuce Wraps

Ingredients

  • small white onion
  • 4 small garlic cloves
  • 2 black bean cans
  • 2 cups water
  • 2 tsp chili powder
  • 2 tsp paprika
  • 2 tsp salt
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp garlic powder / optional

Preparation

  1. Sauté garlic and onions in pan with drizzle or avocado oil

  2. Once it’s fragrant add in rinsed in black beans, water, and spices

  3. Stir and put lid on, keep on medium-low heat for a constant simmer

  4. Let simmer for 30 minutes till beans are fully cooked and water is almost absorbed

  5. Stir and taste to see if you need to add more spices

  6. Place black beans on lettuce wraps top with fresh chopped tomatoes

  7. Drizzle avocado sour cream (recipe is on last post) pumpkin seeds, and hot sauce
