Delicious Walnut Meat Taco Alternative
Ingredients
- 2 cups walnuts
- 1 small onion
- 1- 4.5 oz green chiles
- 1- 14.5 oz Fire Roasted Sweet & Smoky diced tomatoes
- 1/4 tsp black pepper
- 3/4 tsp salt
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tbsp chili powder
- 1/2 tsp paprika
- 1/2 tsp oregano
Preparation
Soak walnuts in a bowl, covered with water for at least 30 minutes.
Put them into a food processor and pulse until you have meat-like consistency.
Dice onion and add avocado oil to a skillet.
Sauté onions until translucent (about 2-3 minutes).
Add walnuts, seasonings, green chiles, and diced tomatoes.
Stir to combine and cook for 10 minutes on medium heat.
Serve on a tortilla with your favorite taco toppings.
