Southwest Potato Chips and Guacamole

Ingredients

  • 4 russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

Optional southwestern spices

  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic

Guacamole

  • 1 avocado
  • 1/4 cup tomatoes
  • 1/4 cup onion
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin

Preparation

  1. Slice the potatoes thinly

  2. Toss the sliced potatoes with olive oil and seasonings.

  3. Bake on a wire rack at 400°F for 50 minutes.

Guacamole

  1. Mash the avocado

  2. Dice the tomatoes and onion

  3. Mix all guacamole ingredients together and enjoy.
