Southwest Potato Chips and Guacamole
Ingredients
- 4 russet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
Optional southwestern spices
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon garlic
Guacamole
- 1 avocado
- 1/4 cup tomatoes
- 1/4 cup onion
- 1 tablespoon lime juice
- 1 tablespoon cilantro
- 1/2 teaspoon salt
- 1/4 teaspoon cumin
Preparation
Slice the potatoes thinly
Toss the sliced potatoes with olive oil and seasonings.
Bake on a wire rack at 400°F for 50 minutes.
Guacamole
Mash the avocado
Dice the tomatoes and onion
Mix all guacamole ingredients together and enjoy.
