Oil-Free Baked Jackfruit Tacos with Cashew Queso

Ingredients

  • 2 cans 20 oz jackfruit (young green in brine)
  • 1 Tbl creamy natural peanut butter
  • 1 tsp garlic powder
  • 2 tsp paprika
  • 2 tsp cumin
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 yellow onion sliced
  • 15 oz drained black beans

Preparation

  1. Preheat oven to 425F.

  2. Drain and rinse jackfruit.

  3. Place on a clean kitchen towel and press down to remove excess water and crush.

  4. Transfer to a bowl and mix with spices.

  5. Add peanut butter and mix until combined.

  6. Mix in onion slices.

  7. Pour seasoned jackfruit mix onto a parchment-lined baking sheet and spread into a thin layer.

  8. Bake for 15 minutes, then flip and bake for 10 more minutes.

  9. Broil for 5 minutes to get crisp.

  10. Add 15 oz drained black beans for protein.

  11. Assemble tacos and top with cashew queso.
