Oil-Free Baked Jackfruit Tacos with Cashew Queso
Ingredients
- 2 cans 20 oz jackfruit (young green in brine)
- 1 Tbl creamy natural peanut butter
- 1 tsp garlic powder
- 2 tsp paprika
- 2 tsp cumin
- 1 tsp salt
- 1 tsp chili powder
- 1 yellow onion sliced
- 15 oz drained black beans
Preparation
Preheat oven to 425F.
Drain and rinse jackfruit.
Place on a clean kitchen towel and press down to remove excess water and crush.
Transfer to a bowl and mix with spices.
Add peanut butter and mix until combined.
Mix in onion slices.
Pour seasoned jackfruit mix onto a parchment-lined baking sheet and spread into a thin layer.
Bake for 15 minutes, then flip and bake for 10 more minutes.
Broil for 5 minutes to get crisp.
Add 15 oz drained black beans for protein.
Assemble tacos and top with cashew queso.
