Al Pastor Tacos

Ingredients

  • 2 lbs pork shoulder or loin
  • 1 cup chicken broth
  • 1/2 white onion (larges slices)
  • juice of 1 lime
  • ~ 1 cup pineapple (large slices)
  • 2-3 tbsp chili powder
  • 2 tsp garlic
  • 1 tsp of: paprika
  • oregano
  • salt and pepper
  • 2-3 cups diced pineapple
  • 1/2 white onion diced finely
  • 3-4 tbsp cilantro
  • juice of 1 lime
  • salt⁣
  • avocado
  • pickled onions

Preparation

  1. In a crockpot, add 2 lbs pork shoulder or loin, 1 cup chicken broth, 1/2 white onion (larges slices), juice of 1 lime, ~ 1 cup pineapple (large slices), 2-3 tbsp chili powder, 2 tsp garlic, 1 tsp of: paprika, oregano, salt and pepper; cook on high for 3-4 hrs or low for 6-7 hrs; remove onion and pineapple, shred pork and put back in liquid for 20-30 min before serving ⁣

  2. Cups diced pineapple, 1/2 white onion diced finely, 3-4 tbsp cilantro, juice of 1 lime, salt⁣

  3. Avocado, pickled onions
