Al Pastor Tacos
Ingredients
- 2 lbs pork shoulder or loin
- 1 cup chicken broth
- 1/2 white onion (larges slices)
- juice of 1 lime
- ~ 1 cup pineapple (large slices)
- 2-3 tbsp chili powder
- 2 tsp garlic
- 1 tsp of: paprika
- oregano
- salt and pepper
- 2-3 cups diced pineapple
- 1/2 white onion diced finely
- 3-4 tbsp cilantro
- juice of 1 lime
- salt
- avocado
- pickled onions
Preparation
In a crockpot, add 2 lbs pork shoulder or loin, 1 cup chicken broth, 1/2 white onion (larges slices), juice of 1 lime, ~ 1 cup pineapple (large slices), 2-3 tbsp chili powder, 2 tsp garlic, 1 tsp of: paprika, oregano, salt and pepper; cook on high for 3-4 hrs or low for 6-7 hrs; remove onion and pineapple, shred pork and put back in liquid for 20-30 min before serving
