Avocado Spinach Black Bean Quesadillas

Ingredients

  • 2 almond tortillas
  • avocado oil for spraying
  • spinach
  • black beans
  • cumin
  • vegan Gouda or other plant-based cheese
  • avocado

Mango chipotle sauce

  • 1/2 ripe mango
  • 1-2 tablespoons chipotle sauce or hot sauce of choice

Preparation

  1. Spray a pan with avocado oil and heat to medium-high, then place 2 almond tortillas in the pan to heat

  2. While the tortillas are heating, add spinach to the same pan to wilt it

  3. Mash some black beans and spread them on one side of each tortilla, then sprinkle with cumin

  4. Top the beans with vegan Gouda or your choice of plant-based cheese

  5. Once the cheese begins to melt, add the wilted spinach and mashed avocado on top

  6. Fold the tortilla over and cook for another 30 seconds or so

  7. For the Mango Chipotle sauce, blend 1/2 ripe mango with 1-2 tablespoons of chipotle sauce or hot sauce of choice
