Spiced Avocado Black Bean Quesadillas with Mango Sauce

Ingredients

  • 2 almond tortillas
  • avocado oil spray
  • black beans
  • cumin
  • vegan Gouda or other cheese
  • spinach
  • avocado
  • 1/2 ripe mango
  • 1-2 tablespoons chipotle sauce or hot sauce

Preparation

  1. Heat 2 almond tortillas in a pan sprayed with avocado oil on medium high.

  2. Heat spinach in the same pan while tortillas are cooking.

  3. Mash black beans onto one side of the tortilla.

  4. Add a sprinkle of cumin.

  5. Top with vegan Gouda.

  6. Once cheese starts melting, add wilted spinach and mashed avocado.

  7. Fold over and cook for another 30 seconds.

  8. For the sauce, blend 1/2 ripe mango with 1-2 tablespoons chipotle sauce.
