Spiced Avocado Black Bean Quesadillas with Mango Sauce
Ingredients
- 2 almond tortillas
- avocado oil spray
- black beans
- cumin
- vegan Gouda or other cheese
- spinach
- avocado
- 1/2 ripe mango
- 1-2 tablespoons chipotle sauce or hot sauce
Preparation
Heat 2 almond tortillas in a pan sprayed with avocado oil on medium high.
Heat spinach in the same pan while tortillas are cooking.
Mash black beans onto one side of the tortilla.
Add a sprinkle of cumin.
Top with vegan Gouda.
Once cheese starts melting, add wilted spinach and mashed avocado.
Fold over and cook for another 30 seconds.
For the sauce, blend 1/2 ripe mango with 1-2 tablespoons chipotle sauce.
