Avocado Spinach Black Bean Quesadillas

Ingredients

  • 2 almond tortillas
  • Avocado oil for spraying
  • Spinach
  • Black beans
  • Cumin
  • Vegan Gouda or other plant-based cheese
  • Avocado

Mango chipotle sauce

  • 1/2 ripe mango
  • 1-2 tablespoons chipotle sauce or hot sauce of choice

Preparation

  1. Heat the almond tortillas in a pan sprayed with avocado oil on medium-high heat.

  2. While the tortillas are cooking, wilt the spinach in the same pan.

  3. Mash some black beans onto one side of the tortilla and add a sprinkle of cumin.

  4. Top the beans with vegan Gouda or any plant-based cheese of your choice.

  5. Once the cheese starts melting, add some of the wilted spinach and mashed avocado, then fold the tortilla over.

  6. Cook for another 30 seconds or so.

Sauce

  1. Blend 1/2 ripe mango with 1-2 tablespoons of chipotle sauce or hot sauce of your choice.
