Avocado Spinach Black Bean Quesadillas

Ingredients

  • 2 almond tortillas
  • avocado oil
  • spinach
  • black beans
  • cumin
  • vegan Gouda
  • avocado

Mango chipotle sauce

  • 1/2 ripe mango
  • 1-2 tablespoons chipotle sauce

Preparation

  1. Heat 2 almond tortillas on medium high in a pan sprayed with avocado oil.

  2. Heat spinach in the same pan while the tortillas are cooking.

  3. Mash black beans onto one side of the tortilla and add a sprinkle of cumin.

  4. Top the beans with vegan Gouda or any plant-based cheese of choice.

  5. Once the cheese starts melting, add the wilted spinach and mashed avocado, then fold over.

  6. Cook for another 30 seconds or so.

Mango sauce

  1. Blend 1/2 ripe mango with 1-2 tablespoons of chipotle sauce or any hot sauce of choice.
