Vegan Cumin-Spiced Avocado Black Bean Quesadillas
Ingredients
- 2 almond tortillas
- avocado oil for spraying
- black beans
- cumin
- vegan Gouda or other vegan cheese
- spinach
- avocado
- 1/2 ripe mango
- 1-2 tablespoons chipotle sauce
Preparation
Heat 2 almond tortillas on medium high in a pan sprayed with avocado oil and heat spinach in the same pan while the tortillas are cooking.
Mash black beans onto one side of the tortilla, add a sprinkle of cumin, and top with vegan cheese.
Once the cheese starts melting, add the wilted spinach and mashed avocado, fold over, and cook for another 30 seconds.
For the sauce, blend 1/2 ripe mango with 1-2 tablespoons chipotle sauce.
Enjoy the quesadillas with the mango chipotle sauce.
