Avocado Spinach Black Bean Quesadillas

Ingredients

  • 2 almond tortillas
  • avocado oil (for spraying)
  • spinach
  • black beans
  • cumin
  • vegan Gouda or plant-based cheese
  • avocado
  • 1/2 ripe mango
  • 1-2 tablespoons chipotle sauce or hot sauce

Preparation

  1. Spray a pan with avocado oil and heat over medium-high heat.

  2. Place 2 almond tortillas in the pan and heat them, while simultaneously heating the spinach in the same pan.

  3. Mash some black beans onto one side of each tortilla and sprinkle with cumin.

  4. Top the beans with vegan Gouda or plant-based cheese.

  5. Once the cheese starts melting, add some wilted spinach and mashed avocado, then fold the tortilla over.

  6. Cook for another 30 seconds or so.

  7. For the mango chipotle sauce, blend 1/2 ripe mango with 1-2 tablespoons of chipotle sauce or hot sauce.
