Cumin-Spiced Avocado Black Bean Quesadillas with Mango Chipotle Sauce

Ingredients

  • 2 almond tortillas
  • Avocado oil for spraying
  • Black beans
  • Cumin
  • Vegan Gouda or similar cheese
  • Spinach
  • Avocado
  • 1/2 ripe mango
  • 1-2 tablespoons chipotle sauce or hot sauce

Preparation

  1. Heat 2 almond tortillas in a pan sprayed with avocado oil on medium-high heat, and wilt the spinach in the same pan.

  2. Mash some black beans onto one side of a tortilla and sprinkle with cumin.

  3. Top the beans with vegan Gouda or similar cheese.

  4. Once the cheese starts melting, add some wilted spinach and mashed avocado, then fold the tortilla over.

  5. Cook for another 30 seconds or so.

Mango chipotle sauce

  1. Blend 1/2 ripe mango with 1-2 tablespoons chipotle sauce or hot sauce.
