Avocado, Spinach, and Black Bean Quesadillas

Ingredients

  • 2 almond tortillas
  • Avocado oil
  • Spinach
  • Black beans
  • Cumin
  • Vegan Gouda or other plant-based cheese
  • Avocado

Preparation

  1. Heat 2 almond tortillas on medium high in a pan sprayed with avocado oil.

  2. Heat the spinach in the same pan while the tortillas are cooking.

  3. Mash black beans onto one side of the tortilla and add a sprinkle of cumin.

  4. Top the beans with vegan Gouda or any plant-based cheese.

  5. Once the cheese starts melting, add the wilted spinach and mashed avocado.

  6. Fold the tortilla over.

  7. Cook for another 30 seconds or so.
