Red Lentil Tacos
Ingredients
- 1 cup red lentils, uncooked and rinsed
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp olive or avocado oil
- 1.5 cup vegetable broth
- 1 small can green chilis
- 1 tbsp chili powder
- 1/2 tbsp cumin
- 1/2 tbsp paprika
- 1/2 tsp dried oregano
- A pinch of salt & pepper
Preparation
Heat oil over medium heat, sauté onions until soft and add garlic
Add all spices and cook for 1 min stirring continuously
Add lentils, green chilis, vegetable broth and bring to a soft boil
Reduce heat to a simmer, cover and let cook for 15 minutes until liquid has absorbed
Fill tacos with lentil and all of your favourite toppings
