Red Lentil Tacos

Ingredients

  • 1 cup red lentils, uncooked and rinsed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive or avocado oil
  • 1.5 cup vegetable broth
  • 1 small can green chilis
  • 1 tbsp chili powder
  • 1/2 tbsp cumin
  • 1/2 tbsp paprika
  • 1/2 tsp dried oregano
  • A pinch of salt & pepper

Preparation

  1. Heat oil over medium heat, sauté onions until soft and add garlic

  2. Add all spices and cook for 1 min stirring continuously

  3. Add lentils, green chilis, vegetable broth and bring to a soft boil

  4. Reduce heat to a simmer, cover and let cook for 15 minutes until liquid has absorbed

  5. Fill tacos with lentil and all of your favourite toppings
