Easy Mexican Rice with Spices and Tomatoes
Ingredients
- olive oil
- 1 small chopped onion
- 2 minced garlic cloves
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 tablespoon tajin seasoning
- 1 cup uncooked jasmine rice
- 28 oz can diced tomatoes
- 1 cup vegetable broth
- cilantro for topping
Preparation
Sauté the chopped onion in olive oil for 4 minutes.
Add minced garlic, spices, and rice; stir and cook for 2 more minutes.
Add diced tomatoes and 1/2 cup vegetable broth; bring to a boil and simmer for 10 minutes, stirring occasionally.
Add another 1/2 cup vegetable broth and continue simmering until rice is cooked and liquid is absorbed.
Top with cilantro and enjoy.
