Easy Mexican Rice with Spices and Tomatoes

Ingredients

  • olive oil
  • 1 small chopped onion
  • 2 minced garlic cloves
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 tablespoon tajin seasoning
  • 1 cup uncooked jasmine rice
  • 28 oz can diced tomatoes
  • 1 cup vegetable broth
  • cilantro for topping

Preparation

  1. Sauté the chopped onion in olive oil for 4 minutes.

  2. Add minced garlic, spices, and rice; stir and cook for 2 more minutes.

  3. Add diced tomatoes and 1/2 cup vegetable broth; bring to a boil and simmer for 10 minutes, stirring occasionally.

  4. Add another 1/2 cup vegetable broth and continue simmering until rice is cooked and liquid is absorbed.

  5. Top with cilantro and enjoy.
