Mexican Quinoa One Pot
Ingredients
- 1 small onion
- 2 cloves of garlic
- 2 bell peppers
- 200g / 1 Cup quinoa
- 375 ml / 1 1/2 Cups vegetable broth
- 2 cans diced tomatoes
- 1 can kidneybeans
- 1 small can corn
- 1 Tbsp Paprika
- 1/2 Tbsp Cumin
- Juice of one lime
- 1 bunch of fresh parsley
- Salt
- Pepper
- Chili
- 1 Avocado for garnish
Preparation
Sauté onion in olive oil for 2-3 mins, then add garlic and bell peppers and sauté for 2 mins
Add the rest of your ingredients (unless lime juice, Parsley and avocado) and let simmer for 20 mins
Add lime juice and chopped parsley and serve it with avocado
