Mexican Quinoa One Pot

Ingredients

  • 1 small onion⁣
  • 2 cloves of garlic⁣
  • 2 bell peppers ⁣
  • 200g / 1 Cup quinoa⁣
  • 375 ml / 1 1/2 Cups vegetable broth⁣
  • 2 cans diced tomatoes ⁣
  • 1 can kidneybeans⁣
  • 1 small can corn⁣
  • 1 Tbsp Paprika ⁣
  • 1/2 Tbsp Cumin⁣
  • Juice of one lime ⁣
  • 1 bunch of fresh parsley ⁣
  • Salt⁣
  • Pepper⁣
  • Chili⁣
  • 1 Avocado for garnish⁣

Preparation

  1. Sauté onion in olive oil for 2-3 mins, then add garlic and bell peppers and sauté for 2 mins

  2. Add the rest of your ingredients (unless lime juice, Parsley and avocado) and let simmer for 20 mins

  3. Add lime juice and chopped parsley and serve it with avocado
