Vegetable Curry with Basmati Rice
Ingredients
- 2 bell pepper
- 1 clove of garlic.
- 1 sweet potato
- 2 carrots
- 1 onion
- ginger to taste
- 1 cup of vegetable broth
- 1 cup of coconut milk
- salt and pepper to taste
- 1 teaspoon of curry paste
- 2 tablespoons of sesame oil
- 1 chilli
- a handful of parsley
- basmati rice for serving
- 1 lime
Preparation
Heat the oil and add the curry paste, then add the garlic and grated ginger
Once the pasta
Has melted, add the vegetables cut into small pieces
Salt, pepper and mix constantly
Coconut milk and vegetable broth and cook until they are ready and the sauce is pretty thick
Separately, cook the rice as it is written in the package and set aside
Once the vegetable curry is ready, add the lime juice, mix and serve with basmati rice,
Sprinkled with parsley and chopped chilli
