Big Bowl of Chilli

Ingredients

  • 2 tbsp vegetable oil
  • 1 medium onion
  • 3 cloves garlic
  • 2 bell peppers
  • 1-2 cups chopped mushrooms (optional)
  • 1/2 cup tomato passata
  • 3-4 tbsp tomato paste
  • 1 cup vegetable stock
  • 2 squares dark chocolate
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 1/2 tsp salt

Preparation

  1. Blend: 2-3 tsp chilli powder

  2. Mince garlic, peel and dice onion, deseed and dice chilli pepper, and chop bell peppers and mushrooms

  3. Heat oil in a large pot on medium and sauté onions for 3-5 minutes until translucent

  4. Add garlic, mince, chilli pepper or flakes, and spice blend. stir together well and cook for a few minutes

  5. To the pot add bell peppers, mushrooms, kidney beans (drained), chopped tomatoes, tomato paste and passata, and vegetable stock. stir well and season with salt and pepper to taste. cover with a lid, reduce heat to medium low, and simmer for 25-30 minutes, stirring occasionally so it doesn’t stick to the bottom

  6. Add dark chocolate, and once melted, stir well and remove chilli from heat. let sit for about 10 minutes before serving. top with vegan sour cream or a little shredded cheese and enjoy
