Thai Glass Noodle Soup
Ingredients
- 50g dried and reconstituted shiitake mushrooms, finely minced
- 50g dried and reconstituted bean curd skin, roughly torn
- 4 cups of vegetable stock
- 2 tbs light soy sauce
- pinch of sugar
- 1 spring onion, finely sliced
- handful of coriander
- pinch of white pepper
- paste—
- 5 white peppercorns
- pinch of salt
- 1 tbs chopped garlic
- 1 tsp chopped coriander root (can also use coriander stem instead, just double the amount)
Preparation
Add paste ingredients to a mortar and pestle or blender and pound/blitz to make a paste.
Get a pot hot and add oil
Fry paste for 5 minutes stirring to avoid burning
Add stock and bring to a boil
Add all other ingredients
Serve with rice and garnish with spring onion, coriander and white pepper
