Thai Glass Noodle Soup

Ingredients

  • 50g dried and reconstituted shiitake mushrooms, finely minced⁣
  • 50g dried and reconstituted bean curd skin, roughly torn⁣
  • 4 cups of vegetable stock⁣
  • 2 tbs light soy sauce⁣
  • pinch of sugar⁣
  • 1 spring onion, finely sliced⁣
  • handful of coriander⁣
  • pinch of white pepper⁣
  • paste—⁣
  • 5 white peppercorns⁣
  • pinch of salt⁣
  • 1 tbs chopped garlic⁣
  • 1 tsp chopped coriander root (can also use coriander stem instead, just double the amount)

Preparation

  1. Add paste ingredients to a mortar and pestle or blender and pound/blitz to make a paste.⁣

  2. Get a pot hot and add oil

  3. Fry paste for 5 minutes stirring to avoid burning

  4. Add stock and bring to a boil

  5. Add all other ingredients

  6. Serve with rice and garnish with spring onion, coriander and white pepper
