Sweet Potato and Black Bean Bowl

Ingredients

  • sweet potato
  • olive oil and spices
  • smoked paprika
  • salt and pepper
  • an onion
  • cloves of garlic
  • baby plum tomatoes
  • tin of black beans
  • cumin
  • coriander and more paprika
  • chilli

Preparation

  1. Such a quick and tasty mid-week meal ? top tip - the smaller you dice your sweet potato, the quicker it'll be on the table ? I roasted mine at 180 degrees for around 20 minutes, tossed in olive oil and spices (a lot of smoked paprika, salt and pepper will do me ? ). ⁠⠀

  2. Meanwhile, fry an onion and a couple of cloves of garlic in a pan ? once they've softened, add a handful of chopped baby plum tomatoes and a tin of black beans ? and don't forget the seasoning! I went in with some cumin, coriander and more paprika. You could add in a chilli for a bit of heat. I then squeezed in half a lime and when the roast potatoes were cooked, tossed it all together for a few minutes ? topped with lotsss of guacamole you've got yourself a healthy and speedy meal for two
