Sweet Potato and Black Bean Bowl

Ingredients

  • Sweet potato
  • Olive oil
  • Smoked paprika
  • Salt
  • Pepper
  • Onion
  • A couple of garlic cloves
  • A handful of chopped baby plum tomatoes
  • A tin of black beans
  • Cumin
  • Coriander
  • Paprika
  • Optional chili
  • Half a lime
  • Guacamole

Preparation

  1. Dice the sweet potato into small pieces for quicker cooking.

  2. Toss the diced sweet potato with olive oil, smoked paprika, salt, and pepper.

  3. Roast in the oven at 180 degrees Celsius for about 20 minutes.

  4. Meanwhile, fry an onion and a couple of garlic cloves in a pan until softened.

  5. Add a handful of chopped baby plum tomatoes and a tin of black beans to the pan.

  6. Season with cumin, coriander, and more paprika.

  7. Optionally, add a chili for some heat.

  8. Squeeze in the juice of half a lime.

  9. Once the sweet potatoes are cooked, toss everything together in the pan and cook for a few more minutes.

  10. Top with a generous amount of guacamole and serve.

Tips

  1. The smaller you dice the sweet potato, the quicker it will cook.

  2. This makes a healthy and speedy meal for two people.
