Sheet Pan Tacos
Ingredients
- 2 peppers
- 1 onion
- and 1 sweet potato
- 2 tbsp olive oil + 1 tbsp garlic powder + 1 tsp of onion powder + 1 tsp chili powder + sprinkled some chipotle powder + salt
- 1 15 ounce can of chickpeas
Preparation
Preheated oven to 425F
Cut up my veggies first
I used 2 peppers, 1 onion, and 1 sweet potato
Added them to a bowl and coated with 2 tbsp olive oil + 1 tbsp garlic powder + 1 tsp of onion powder + 1 tsp chili powder + sprinkled some chipotle powder + salt
Added the veggies to 1/2 a greased baking sheet
Used the same bowl and added 1 15 ounce can of chickpeas that I rinsed and patted dry
Added 1 tsp olive oil + sprinkled more chipotle powder, chili powder, and salt on top
I used a tsp of chili powder and eyeballed the salt and chipotle powder
Mixed that together and added the chickpeas to the other side
Baked for 20 minutes
