Sheet Pan Tacos

Ingredients

  • 2 peppers
  • 1 onion
  • and 1 sweet potato
  • 2 tbsp olive oil + 1 tbsp garlic powder + 1 tsp of onion powder + 1 tsp chili powder + sprinkled some chipotle powder + salt
  • 1 15 ounce can of chickpeas

Preparation

  1. Preheated oven to 425F

  2. Cut up my veggies first

  3. I used 2 peppers, 1 onion, and 1 sweet potato

  4. Added them to a bowl and coated with 2 tbsp olive oil + 1 tbsp garlic powder + 1 tsp of onion powder + 1 tsp chili powder + sprinkled some chipotle powder + salt

  5. Added the veggies to 1/2 a greased baking sheet

  6. Used the same bowl and added 1 15 ounce can of chickpeas that I rinsed and patted dry

  7. Added 1 tsp olive oil + sprinkled more chipotle powder, chili powder, and salt on top

  8. I used a tsp of chili powder and eyeballed the salt and chipotle powder

  9. Mixed that together and added the chickpeas to the other side

  10. Baked for 20 minutes
