Vegan Chickpea and Nori Sandwich Option

Ingredients

  • 1 can of chickpeas, drained
  • 1 heaped tbsp vegan mayo
  • 3-4 sheets of nori (dried seaweed)
  • 4/5 slices of cucumber
  • 1/4 of a red onion
  • 2-3 sprigs of spring onion
  • 1/2 a lemon
  • Salt & pepper
  • Some gooooood bread

Preparation

  1. Finely chip everything except the cucumber & chickpeas.

  2. Mix everything, except the cucumber, together & check for seasoning.

  3. Have to slices of bread ready & on one side layer the cucumber & then top with the chickpea mixture.

  4. Slap the other slice on top & youve got yourself a sarnie !
