Vegan Chickpea and Nori Sandwich Option
Ingredients
- 1 can of chickpeas, drained
- 1 heaped tbsp vegan mayo
- 3-4 sheets of nori (dried seaweed)
- 4/5 slices of cucumber
- 1/4 of a red onion
- 2-3 sprigs of spring onion
- 1/2 a lemon
- Salt & pepper
- Some gooooood bread
Preparation
Finely chip everything except the cucumber & chickpeas.
Mix everything, except the cucumber, together & check for seasoning.
Have to slices of bread ready & on one side layer the cucumber & then top with the chickpea mixture.
Slap the other slice on top & youve got yourself a sarnie !
