Vegan Chickpea Crunch Sandwich
Ingredients
- 1 can chickpeas, drained
- 1/2 cup vegan mayo
- 1 cup mixed seeds (pumpkin seeds, flax seeds, sesame seeds, sunflower seeds)
- 1/2 cup red onion, diced
- 1 red pepper, diced
- 1 Tbsp sweet chilli sauce
- 1 tbsp Dijon Mustard
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Juice of 1 lemon
- Salt and black pepper, to taste
Preparation
Add the drained chickpeas to a bowl and mash, leaving some chunks.
Add the remaining ingredients and mix together.
Serve in your favorite sliced bread. Add iceberg lettuce for extra crunch and enjoy.
Tips
Also delicious in pasta for lunches and perfect as a topping for jacket potatoes.
