Easy Vegan Chickpea Tuna Sandwich

Ingredients

  • 1 can cooked chickpeas, rinsed and drained
  • 1 tbsp onion, diced
  • 1/3 cup vegan mayo, more if desired
  • 2 tbsp bell pepper, diced
  • 1 tsp yellow mustard
  • 1/2 tsp salt, more to taste
  • 1/4 tsp garlic powder
  • dash of black pepper
  • 2 slices vegan bread, whichever you prefer

Preparation

  1. Rinse and drain the canned chickpeas, then shake off or pat dry excess water to prevent wateriness.

  2. Transfer half of the chickpeas to a flat surface and mash them until relatively mashed.

  3. Transfer the mashed chickpeas to a bowl with the remaining chickpeas and set aside.

  4. Dice the onion and bell pepper, along with any other vegetables or substitutes being added.

  5. Add the diced vegetables to the bowl with the chickpeas.

  6. Add the mayo, mustard, and spices, then stir well to combine.

  7. Mash the mixture a bit more if desired for a smoother consistency.

  8. Season with salt and pepper to taste.

  9. Spread the chickpea mixture on vegan bread to assemble the sandwiches.
