Vegan Eggplant BLT Sandwich with Marinade

- Vegan mayo or dressing
- Lettuce
- Tomato
- Avocado
- Thinly sliced eggplant
Marinade
- Coconut aminos
- Avocado oil
- Liquid smoke
- Salt
- Pepper
- Garlic powder
- Chili powder
Preparation
Preheat oven to 400 degrees Fahrenheit. High heat makes tender and soft eggplant, or use low and slow heat for a crispier option.
Assemble the marinade using coconut aminos, avocado oil, liquid smoke (approximately 1 teaspoon), salt, pepper, garlic powder, and chili powder. No precise measuring is required, but use liquid smoke sparingly.
Coat each thinly sliced eggplant in the marinade and place on a baking pan lined with parchment paper.
Bake for about 30 minutes, flipping halfway through.
Assemble the sandwich as desired with bread, vegan mayo or dressing, lettuce, tomato, and avocado.
