Vegan Eggplant BLT Sandwich with Marinade

  • Thinly sliced eggplant

Marinade

  • Coconut aminos
  • Avocado oil
  • Liquid smoke
  • Salt
  • Pepper
  • Garlic powder
  • Chili powder

Preparation

  1. Preheat oven to 400 degrees Fahrenheit. High heat makes tender and soft eggplant, or use low and slow heat for a crispier option.

  2. Assemble the marinade using coconut aminos, avocado oil, liquid smoke (approximately 1 teaspoon), salt, pepper, garlic powder, and chili powder. No precise measuring is required, but use liquid smoke sparingly.

  3. Coat each thinly sliced eggplant in the marinade and place on a baking pan lined with parchment paper.

  4. Bake for about 30 minutes, flipping halfway through.

  5. Assemble the sandwich as desired with bread, vegan mayo or dressing, lettuce, tomato, and avocado.
