Tasty Vegan Egg Sandwich
Ingredients
- 1/4 cup chickpea flour
- 1/4 cup + 1 tbsp water
- salt
- pepper
- garlic powder
- tomato
- red onion
- vegan mayo
- 1 avocado
- 1/4 lemon (juiced)
- extra virgin olive oil
- sourdough bread
Preparation
Mix flour and water to make the egg mixture, add salt, pepper, and garlic powder to taste.
Add a little extra virgin olive oil to a pan, pour the egg mixture into the pan and cook on low heat. Once the top is cooked through, flip it into a triangle shape.
Toast the bread. Mash the avocado with salt, pepper, and lemon juice, then spread it onto the toasted bread. Spread vegan mayo onto the other side of the bread.
Slice the tomato and red onion and add them to the sandwich.
