Baked Potato Cake Sandwich with Fresh Veggies

Ingredients

  • 1 cup mashed potato (make the day before for best results)
  • 1 tablespoon hemp flour
  • 1/4 onion, chopped finely
  • 1 teaspoon Italian herbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic granules
  • salt and black pepper to taste

Sandwich components

  • lettuce
  • tomato
  • avocado

Preparation

  1. Mix all the ingredients together to form a uniform mixture.

  2. Mould the mixture into 2 cakes.

  3. Bake in the oven at 200°C for 30 minutes, flipping halfway through for even cooking.

  4. Assemble the sandwich using the baked potato cakes with lettuce, tomato, and avocado for a tasty lunch or snack.
