Baked Potato Cake Sandwich with Fresh Veggies
Ingredients
- 1 cup mashed potato (make the day before for best results)
- 1 tablespoon hemp flour
- 1/4 onion, chopped finely
- 1 teaspoon Italian herbs
- 1 teaspoon smoked paprika
- 1 teaspoon garlic granules
- salt and black pepper to taste
Sandwich components
- lettuce
- tomato
- avocado
Preparation
Mix all the ingredients together to form a uniform mixture.
Mould the mixture into 2 cakes.
Bake in the oven at 200°C for 30 minutes, flipping halfway through for even cooking.
Assemble the sandwich using the baked potato cakes with lettuce, tomato, and avocado for a tasty lunch or snack.
