Homemade Baked Beans with Rye Toast and Avocado
Ingredients
- 1 onion
- Olive oil
- 1/2 tsp smoked paprika
- 1/2 red pepper
- 1 tin haricot/pinto beans
- 1 tin tomatoes
- Salt and pepper
- Toast to serve
Preparation
Finely dice the onion, then saute over a low heat with a little olive oil until translucent.
Add the paprika, then meanwhile chop the pepper into very small pieces.
Add the pepper and fry for a few minutes, then add the beans.
Pour in the tomatoes along with a small amount of water washed out the can, and season well.
Serving
Serve on fresh rye toast topped with a big serving of the baked beans and sliced avocado, finished with salt, pepper, and chilli flakes for heat.
