Homemade Baked Beans with Rye Toast and Avocado

Ingredients

  • 1 onion
  • Olive oil
  • 1/2 tsp smoked paprika
  • 1/2 red pepper
  • 1 tin haricot/pinto beans
  • 1 tin tomatoes
  • Salt and pepper
  • Toast to serve

Preparation

  1. Finely dice the onion, then saute over a low heat with a little olive oil until translucent.

  2. Add the paprika, then meanwhile chop the pepper into very small pieces.

  3. Add the pepper and fry for a few minutes, then add the beans.

  4. Pour in the tomatoes along with a small amount of water washed out the can, and season well.

Serving

  1. Serve on fresh rye toast topped with a big serving of the baked beans and sliced avocado, finished with salt, pepper, and chilli flakes for heat.
