Vegan Chickpea Tuna Sandwich
Ingredients
- 1 can cooked chickpeas, rinsed and drained
- 1 tablespoon onion, diced
- 1/3 cup vegan mayo, more if desired
- 2 tablespoons bell pepper, diced
- 1 teaspoon yellow mustard
- 1/2 teaspoon salt, more to taste
- 1/4 teaspoon garlic powder
- dash of black pepper
- 2 slices vegan bread, whichever you prefer
Preparation
Rinse and drain the canned chickpeas, and shake off or pat dry excess water to prevent the mixture from being watery.
Mash half of the chickpeas on a flat surface until relatively mashed.
Combine the mashed chickpeas with the remaining whole chickpeas in a bowl and set aside.
Dice the onion and bell pepper, and any additional vegetables or substitutes.
Add the diced vegetables to the bowl with the chickpeas.
Add the vegan mayo, yellow mustard, salt, garlic powder, and black pepper, then stir well to combine.
Optionally, mash the mixture further for a smoother consistency.
Adjust seasoning with salt and pepper to taste.
Spread the chickpea mixture on vegan bread slices to assemble the sandwiches
