No Egg Salad Wraps

Ingredients

  • 1 block medium firm tofu (15 ounces)
  • 2 stalks of celery, finely chopped
  • 2 green onions, finely chopped (white and light green only)
  • 1/2 small dill pickle, finely chopped
  • 6 tbsp vegan mayo
  • 2 tsp nutritional yeast
  • 2 tsp yellow mustard
  • 1/2 tsp celery seeds
  • 1/4 tsp turmeric
  • 1/4 tsp black salt (optional)
  • salt and pepper to taste
  • 1 tbsp pickle juice

Preparation

  1. Press the block of tofu for 15 minutes. Then dice it into small and medium cubes and place in a large mixing bowl.

  2. Fold in the chopped celery, green onions, and pickles.

  3. In a small bowl, mix the mayo and the rest of the ingredients except the pickle juice.

  4. Add the dressing to the tofu mixture. Then mix in the pickle juice. Taste and adjust seasoning.
