Chickpea Tuna Salad Sandwich Stack

Ingredients

  • 3 cups cooked chickpeas or 2 cans drained and rinsed
  • 2 tablespoons vegan mayonnaise
  • 2 teaspoons dijon mustard
  • 1 rib celery
  • 1/4 small red onion
  • 1/4 cup fresh dill
  • Juice of 1/2 lemon
  • 2 teaspoons kelp granules, optional

Preparation

  1. Add all ingredients to a bowl and mash lightly.

  2. Enjoy with salad, in a sandwich or wrap.

  3. No fish are harmed in this recipe.

  4. Kelp granules give a fish taste and are optional; chopped capers can be substituted.
