Chickpea Tuna Salad Sandwich Stack
Ingredients
- 3 cups cooked chickpeas or 2 cans drained and rinsed
- 2 tablespoons vegan mayonnaise
- 2 teaspoons dijon mustard
- 1 rib celery
- 1/4 small red onion
- 1/4 cup fresh dill
- Juice of 1/2 lemon
- 2 teaspoons kelp granules, optional
Preparation
Add all ingredients to a bowl and mash lightly.
Enjoy with salad, in a sandwich or wrap.
No fish are harmed in this recipe.
Kelp granules give a fish taste and are optional; chopped capers can be substituted.
