Easy Vegan Chickpea Tuna Sandwich
Ingredients
- 1 can of chickpeas (≈200g)
- 1/2 can of corn (≈100g)
- 1 tbsp tahini
- 1 tsp tamari or soy sauce
- 2-3 tbsp of water
- juice of half a lemon
- seasoning (I used dried herbs, cumin, lots of garlic, curry and pepper)
Preparation
In a large bowl, mash all ingredients or use a blender/hand mixer.
Serve in a sandwich and add other healthy, tasty ingredients like cooked beets, salad leaves, fresh herbs, sliced tomato, cucumber, avocado, etc.
