Easy Vegan Chickpea Tuna Sandwich

Ingredients

  • 1 can of chickpeas (≈200g)
  • 1/2 can of corn (≈100g)
  • 1 tbsp tahini
  • 1 tsp tamari or soy sauce
  • 2-3 tbsp of water
  • juice of half a lemon
  • seasoning (I used dried herbs, cumin, lots of garlic, curry and pepper)

Preparation

  1. In a large bowl, mash all ingredients or use a blender/hand mixer.

  2. Serve in a sandwich and add other healthy, tasty ingredients like cooked beets, salad leaves, fresh herbs, sliced tomato, cucumber, avocado, etc.
