Easy Vegan Chickpea Tuna Salad
Ingredients
- 14 oz. can of chickpeas, rinsed, and drained
- 1/4 cup of vegan mayo
- 1 tablespoon of Dijon mustard (or spicy!)
- squeeze of lemon
- 1 celery rib, chopped
- minced green or red onion
- 1/2 teaspoon black pepper
- 1/4 teaspoon or more of cayenne pepper
Additions
- Ezekiel bread, toasted
- nori
- romaine lettuce
- sesame seeds to top it
Preparation
Pulse the ingredients in a food processor or blender.
Use ume plum vinegar as an alternative to lemon if available.
Consider chopped lettuce sautéed with onion powder as a substitute for onion if needed.
Add sesame seeds for hormone balance and extra flavor.
Serve on toasted Ezekiel bread with nori and romaine lettuce.
