Coronation Chickpea Sourdough Sandwich

Ingredients

  • 1 can chickpeas
  • 2 tablespoons coconut yoghurt
  • 3 tablespoons vegan mayo
  • 2.5 tablespoons mango chutney
  • 2 teaspoons mild curry powder
  • Pinch cinnamon
  • 0.5 teaspoon lemon juice
  • 1/4 cup dried apricots
  • 1/4 cup celery
  • Salt and pepper to taste
  • Sourdough bread, thickly sliced
  • Rocket
  • Pine nuts

Preparation

  1. Drain the can of chickpeas and mash them roughly, leaving some chickpeas whole.

  2. Add the yogurt, mayo, chutney, curry powder, cinnamon, lemon juice, and dried apricots and mix well.

  3. Season with salt and pepper to taste.

  4. Chill the mix for about 15 minutes.

  5. Assemble with some rocket and top with toasted pine nuts to serve.
