No Egg Salad with Everything Bagel Sandwich
Ingredients
- 4 Everything Bagels
- 2 cans of chickpeas (15 oz each)
- 1/3 cup diced celery
- 1/3 cup chopped green onion
- 1 tbsp chopped dill
- 3 tbsp vegan Mayo
- 1 tbsp deli mustard
- 1 tsp black salt
- 1 tsp black ground pepper
- Salt to taste
- 1 ripe avocado, sliced
Preparation
Toast your bagels.
Drain the cans of chickpeas.
Mash the chickpeas well.
Add the diced celery, chopped green onion, chopped dill, vegan mayo, deli mustard, black salt, and black pepper.
Mix everything to combine.
Fill each bagel with 2 tablespoons of the mixture and sliced avocados.
