Vegan No Egg Salad Bagel Sandwich
Ingredients
- 4 Everything Bagels
- 2 cans of chickpeas (15 oz can)
- 1/3 cup diced celery
- 1/3 cup chopped green onion
- 1 tbsp chopped dill
- 3 tbsp of vegan Mayo
- 1 tbsp of deli mustard
- 1 tsp of black salt
- 1 tsp black ground pepper
- Salt to taste
- 1 ripe avocado sliced
Preparation
Toast your bagels.
Drain the cans of chickpeas.
Mash the chickpeas well.
Add the diced celery, chopped green onion, chopped dill, vegan mayo, deli mustard, black salt, and black pepper.
Mix everything to combine.
Fill each bagel with 2 tablespoons of the no egg salad and sliced avocado.
Notes
The chickpeas give this sandwich a perfectly creamy yolk-like texture, and the black salt gives the eggy taste.
