Roasted Tomato Sandwiches with Garlic Aioli
Ingredients
Tomatoes
- 2 tomatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
Garlic aioli
- 1/4 cup vegan mayo
- 2 tbsp lemon juice
- 1 1/2 tsp garlic powder
- Salt & pepper to taste
Others
- 1 ripe avocado
- Handful of spinach
- 4-6 slices of fresh bread
Preparation
Slice the tomatoes and add them to a baking sheet lined with parchment paper.
Drizzle with olive oil.
Sprinkle with garlic powder, salt, and pepper.
Roast at 375°F for 12 minutes.
While the tomatoes are cooking, toast the bread lightly in a pan with some olive oil until crispy on both sides.
Mix together the garlic aioli ingredients in a small bowl.
When the tomatoes are done, assemble the sandwiches.
