Roasted Tomato Sandwiches with Garlic Aioli

Ingredients

Tomatoes

  • 2 tomatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder

Garlic aioli

  • 1/4 cup vegan mayo
  • 2 tbsp lemon juice
  • 1 1/2 tsp garlic powder
  • Salt & pepper to taste

Others

  • 1 ripe avocado
  • Handful of spinach
  • 4-6 slices of fresh bread

Preparation

  1. Slice the tomatoes and add them to a baking sheet lined with parchment paper.

  2. Drizzle with olive oil.

  3. Sprinkle with garlic powder, salt, and pepper.

  4. Roast at 375°F for 12 minutes.

  5. While the tomatoes are cooking, toast the bread lightly in a pan with some olive oil until crispy on both sides.

  6. Mix together the garlic aioli ingredients in a small bowl.

  7. When the tomatoes are done, assemble the sandwiches.

  8. Enjoy.

  1. This recipe makes 2-3 sandwiches.
