Chickpea No-Egg Salad Bagel Sandwich

Ingredients

  • 4 Everything Bagels
  • 2 cans of chickpeas (15 oz each)
  • 1/3 cup diced celery
  • 1/3 cup chopped green onion
  • 1 tablespoon chopped dill
  • 3 tablespoons vegan mayonnaise
  • 1 tablespoon deli mustard
  • 1 teaspoon black salt
  • 1 teaspoon ground black pepper
  • Salt to taste
  • 1 ripe avocado, sliced

Preparation

  1. Toast your bagels.

  2. Drain the cans of chickpeas.

  3. Mash the chickpeas well.

  4. Add the diced celery, chopped green onion, chopped dill, vegan mayonnaise, deli mustard, black salt, and ground black pepper.

  5. Mix everything to combine.

  6. Fill each bagel with 2 tablespoons of the no-egg salad and sliced avocado.
