Chickpea Patties with Lentil Bulgur Salad and Hummus
Ingredients
- 2 cans chickpeas (400g each), precooked and drained
- 4 garlic cloves
- 1 small red onion
- Parsley
- Mint
- 2 tbsp oil
- Lemon juice
- Salt and pepper
- 1 tbsp corn starch
- 4-5 tbsp chickpea flour
- Green lentils
- Bulgur
- Green peas
- Cumin
- Pumpkin seeds
- Breadcrumbs (optional for coating)
- Additional ingredients for hummus (not specified)
Preparation
Preheat the oven to 200°C (392°F).
In a food processor, combine chickpeas, garlic cloves, red onion, parsley, mint, oil, lemon juice, salt, and pepper. Mix until the mixture starts to crumble and become smooth.
Add corn starch and chickpea flour to the mixture, then form it into patties.
Place the patties on a baking tray lined with parchment paper. Bake in the preheated oven for about 30 minutes.
Alternatively, you can coat the patties in breadcrumbs and fry them instead of baking.
In a pot, combine green lentils, bulgur, and green peas. Add cumin and season with salt and black pepper. Cook the mixture according to package instructions.
Once cooked, drizzle lemon juice over the lentil bulgur mixture.
