Fresh Tabbouleh Style Vegetable Salad with Herbs
Ingredients
- 8 cherry tomatoes
- 1/2 a large cucumber
- 8 radishes
- 2 tbsp pomegranate seeds
- 2 tbsp chopped fresh parsley
- 1-1/2 tbsp chopped fresh mint
- 1 lemon, juiced
- 2 tbsp olive oil
- Salt & pepper
Preparation
Quarter the cherry tomatoes
Cut the cucumber into small cubes
Dice up the radishes
Throw everything in a salad bowl with the remaining ingredients and serve
