Fresh Tabbouleh Style Vegetable Salad with Herbs

Ingredients

  • 8 cherry tomatoes
  • 1/2 a large cucumber
  • 8 radishes
  • 2 tbsp pomegranate seeds
  • 2 tbsp chopped fresh parsley
  • 1-1/2 tbsp chopped fresh mint
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • Salt & pepper

Preparation

  1. Quarter the cherry tomatoes

  2. Cut the cucumber into small cubes

  3. Dice up the radishes

  4. Throw everything in a salad bowl with the remaining ingredients and serve
