Tabbouleh Salad with Fresh Herbs
Ingredients
- 3 bunches fresh parsley
- 2 Roma tomatoes
- Pinch of salt
- 2 tbsp lemon juice
- 1/2 cup bulgur
- 1 cup water
- 1 cucumber
- 2 green onions (scallions)
- 2 tbsp mint
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 1/2 tsp salt
- 1/2 tsp pepper
Preparation
Soak bulgur in 1 cup water for 20-30 minutes until softened, or cook according to package if needed
Finely chop the parsley, mint, tomatoes, cucumber, and green onions
In a large mixing bowl, combine the chopped herbs, vegetables, and soaked bulgur
Add olive oil, lemon juice, salt, and pepper, then toss everything together to combine
Allow the salad to rest for at least 15-30 minutes to let flavors develop
Serve the tabbouleh salad chilled or at room temperature
