Super Healthy and Easy Tabbouleh
Ingredients
- 3 bunches fresh parsley
- 2 Roma tomatoes
- Pinch of salt
- 2 tbsp lemon juice
- 1/2 cup bulgur
- 1 cup water
- 1 cucumber
- 2 green onions (scallions)
- 2 tbsp mint
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 1/2 tsp salt
- 1/2 tsp pepper
Preparation
Soak the bulgur in water for 20-30 minutes until tender, or cook if preferred
Finely chop the parsley, tomatoes, cucumber, green onions, and mint
In a large bowl, combine the chopped vegetables and the prepared bulgur
Whisk together the olive oil, lemon juice, salt, and pepper to create the dressing
Pour the dressing over the mixture and toss well to combine
Allow the tabbouleh to rest for at least 15-30 minutes to enhance flavors before serving
